RECIPE EXCHANGE - INSIDE OUT BURRITO


This recipe has become one of my favorite quick and easy recipes that the family eats. It is from the Kraft Food and Family Magazine. I have changed the name to Inside Out Burrito as I think it describes the dish better. I hope you enjoy!!! Here is the link to the original recipe QUICK FIX BURRITO SKILLET

INGREDIENTS

1 lb. lean ground beef1 pkg.
Taco Seasoning Mix
1 can (19 oz.) kidney beans, drained, rinsed
1 cup Salsa1 cup water
4 flour tortillas (6 inch), cut into 1-1/2-inch squares
1 cup Mexican Style Shredded Four Cheese
1/3 cup Sour Cream
1/3 cup chopped green onions (about 1 large)

DIRECTIONS

BROWN meat in large nonstick skillet on medium-high heat; drain.ADD seasoning mix, beans, salsa and water; stir. Bring to boil. Reduce heat to medium-low; simmer 5 min.STIR in tortillas; top with cheese. Cover; let stand 5 min. or until cheese is melted. Top with sour cream and onions.

MY SUBSTITUTIONS

I like to use Pinto Beans instead of Kidney Beans
I like to top with tomatoes, avocado, or even cilantro.
I blend the water and salsa together so I do not have the chunks of salsa.
